San mai iii provides a blade with hard higher carbon steel in the middle for a keen long lasting edge and tougher lower carbon steel along the sides for flexibility. These three layers give the blade excellent edge holding ability and overall durability. Hard high carbon steel is sandwiched between two layers of tough lower carbon steel maximizing edge holding ability while still withstanding impact and lateral stresses. It is not the same steel as vg 10.
